Can one prove that God isn't lying? I don't think so. God could be one or all of a few things:
Omnibenevolent (all-good) in which case there may be a "good" reason to lie to you (good meaning what God deems worthy of lying to you about; even if "He" is an alien bent on conquering Earth through submission) Omniscient (all-knowing) in which case he knows exactly HOW to lie to you where you'll never know that he did in the first place Omnipotent (all-powerful) is obvious (especially if it excludes the first two; an all powerful being who wasn't all good--not the first time)
What is it about God that makes him inherently trustworthy? What reason is there to trust him? For that matter, what reason is there to trust the people who have supposedly accurately interpreted his word? I can't even prove that YOU'RE not lying and I can converse with you in full.

Very good point Kai. It would also be good to point out that their God could just be doing an experiment like we do on chimps.
